Kokoretch
Kokoreç (Turkish) or kokoretsi (Greek) is a dish of the Balkans and Anatolia consisting mainly of lamb or goat intestines, often wrapping seasoned offal, including sweetbreads, hearts, lungs or kidneys. The intestines of suckling lambs are preferred. The ingredients are sliced and seasoned with lemon, olive oil, oregano, salt, and pepper. The intestine is cleaned especially thoroughly. The filling meats are threaded onto a long skewer and wrapped with the intestine to hold them together. Kokoretch is usually roasted on a horizontal skewer over a charcoal, gas, or electrical burner. The cooked kokoretch is chopped, sprinkled with oregano, and served on a plate. Sometimes it is served on a piece of flatbread. Some add tomatoes or spices in it. It may also (especially in Turkey) be served in half a baguette or in a sandwich bun, plain or garnished, almost always with oregano and red pepper.

Kokoreç (Türkçe) veya kokoretsi (Yunanca) Balkanlar ve Anadolu'nun, sık sık özden, kalp, akciğer veya böbrek olmak üzere baharatlı sakatatı saran başlıca kuzu veya keçi bağırsaklarından oluşan bir yemektir. Süt kuzuların bağırsakları tercih edilir. Malzemeler dilimlenir ve limon, zeytinyağı, kekik, tuz, karabiber ve birlikte tatlandırılır. Bağırsak, özellikle iyice temizlenir. Dolum etler uzun şişe geçirilir ve onları bir arada tutmak için bağırsak ile sarılır. Kokoreç çoğunlukla kömür, doğal gaz ya da elektrik brülörün üzerinde yatay şişle kavrulur. Pişmiş kokoreçe kekik serpilir, doğranır ve bir tabakta servis edilir. Bazen gözleme parçası üzerinde servis edilir. Bazıları domates veya baharat ekler. Ayrıca (özellikle Türkiye'de) hemen hemen her zaman kekik ve kırmızı biber ile, sade veya süslenmiş, yarım baget ya da bir sandviç ekmeğinde servis edilebilir.

Hello Murat, interesting notes. But the intestines of suckling lambs are preferred doesn't sound good for me. Maybe I just have baguette with tomatoes. Nicely composed picture.

Hello Murat,
This is an excellent street photo with an interesting and eye-catching foreground, a woman in red approaching us and lots of fine details further back. Although I have been to Turkey at least a dozen times I can't remember ever trying the kokoreç. I like the idea of lemon, olive oil, oregano, salt and pepper, but I am not so keen on intestines (except liver, which I gladly eat). Maybe I should try to overcome my prejudice. But I did try the işkembe çorbası once – and didn't like it, I'm afraid.

Hello Murat,
A good daily life scene from Istanbul. The baguettes bread looks good but I never tried this local delicacy. The sweeping curve of the esplanade along the Bosporus adds good lead in lines towards the back of the image and enhances the perspective. Tfs!
