Default To lestans: Recipe for Green Pepper Jelly

My wife uses the recipe from the<a

Pantry cookbook</a> I sent you a link to the book on Amazon.com incase you
want to look at the book more. Also, here is the recipe:

Hot Pepper Jelly
6-1/2 cups sugar
1-1/2 cups apple cider vinegar
1/4 cup hot peppers, finely chopped (jalapeŮo work well)
3/4 cup bell pepper, finely chopped
1 bottle Certo
4-5 drops green food coloring

In large deep saucepan combine sugar and vinegar. Bring to a rolling (one
which cannot be broken down by stirring) boil, stirring constantly. Add hot
and bell peppers and cook 2 minutes. Remove from heat; add Certo and green
food coloring. Stir continuously for 10 minutes while cooling, Pour into
sterilized jars and seal with paraffin. If you double this recipe, then
you must also double the cooling and stirring time as this is what prevents
the pieces of chopped pepper from floating to the tops of the jars.

ps she made me a batch for the first time in a long time recently, :) It doesn't smell that great in the cooking process because of the vinegar, but when it is done, Oh, C'est si bon!

Please pardon my mixing a little french on the end of my english ;)

My apologies for the poorly formated link in Recipe for Green Pepper Jelly. It looks like you might have to cut and paste. I can't find a way to edit these discussion posts. :( I'll try the link again here once more. Hopefully...
